Dear Lidia.I just made your polenta from La Cucina di Lidia and It was sooooo salty.I am am big salt lover so I was surprized that It was not edible.Could it be that I used Sea Salt (from Italy)It is a coarse salt and I thought it would be good but maybe 2 tablespoons is mistake.

I watch and love your show all the time. I just received one of your cook books and was disappointed that your peach dessert that you made on tv that had italian bread on the bottom wasn't in the book. Can I please have that recipe? Thanks so much.

Dear Lidia: I have made many of the recipes from Lidia's Family Table with great success. We have eaten many good meals from your cookbook. Today I made the Ragu alla Bolognese, Ricetta Tradizionale. It did not turn out like meat "suspended in a thick flowing medium". I followed the recipe excatly. Is this a dish that takes practice? Mine turned out like ground meat in a watery, grease liquid. The taste was bad but the texture not like your description. Do you have any tip or suggestion of where I went wrong? Thanks! Michele

Dear Lidia,
Last Fall or Winter 2006 on your TV show, you made a recipe for a soup that made a base for 3 different kinds of soups; mushroom and barley, parsnips and scallions, and a soup with a small macaroni pasta in it. All I remember was the soup base had carrots and some tomato paste. I checked out your cookbooks and couldn't find the recipe in any of them. Is there another source where this soup is printed or could I please have the recipe? Thank you. I really enjoy your TV program.

We love Lidia's show and have tried many recipes. My husband is from Italy and Lidia's staple recipes like polenta have been a staple in our home, for years. Lidia's recipes add new interest to our table.
Please help, about the giardiniera recipe in Lidia's cook book. I like the recipe in the cookbook on page 47, but how can I can I preserve it by canning? Will this recipe work or do I have to change something? I canned some quarts using a different recipe this Fall, it's good but too sweet/sour?

my dear lidia i like to know where u have learned to cook italian food..i have been watching ur program on cable tv in australia several times..i thing u need to learn the basics..if u open a trattoria in italy,not a restaurant because will be too much for u will go broke within a month..you must like a lots and a lots of garlic and onion..and ur tomato paste..tomatoes paste and seafood? lol what a conbination..if Gordon Ramsy would come to in one of ur restaurants can u imaggin how many f words u get..u cant cock..!!!!!!
