When I was being a sommelier in NYC I always kept a stash of other stuff - some of it was specifically destined for particular regular customers who I knew had particular interests, some was just there to offer to someone who seemed to want something different. I think every sommelier I know does much the same. The LA Times is so far behind on this one. It's certainly not something that's a secret in the winey/foodie community.
