What is chiffonade?
I first heard the word chiffonade watching Alton Brown’s Good Eats. He was stir frying some melons (another first – have you ever had a warm melon salad?), and said the next step was to add your chiffonade. Huh? Turns out it was just finely sliced ribbons of basil leaf.
